When his flock was forced out of their hiding place by their landlady's discovery, Remy was separated from the pack and ended up in the sewers of Paris. He had a hallucination of Gusteau's soul and, taking his advice to go out and look around, eventually stopped at the roof window looking down on the kitchen of Gusteau's restaurant.

Around the same time, Alfredo Linguini was hired as a cleaner by Skinner, the restaurant's temporary owner and former sous chef at Gusteau. When Linguini spilled the soup pot and tried to cook it again but failed miserably, Remy fell inside the kitchen and cooked the soup perfectly instead of running away. Linguini captures Remy and distracts the chef from the rat, scolded by Skinner. As they were arguing, the soup was accidentally served to the guests and it was a huge success.
