The onion and garlic composition are primarily composed of a sulfur compound that has a strong aroma ingredient, such as Alliin. However, only the destruction of new cell formation can promote the process of Alliin-allicin conversion (a substance created for garlic with a special odor). Allicin makes the lily plant a role to prevent cancer.

Therefore, in order to fully promote his role, onions and garlic must be cut into small pieces and leave it for about 10 minutes before continuing the processing. A bit of oil will enhance its efficiency again. Note: Allicin is not heat resistant. Remember to put garlic in the end when cooking, then do not keep warming.
